Our cuisine is simple and minimalist, focusing on high-quality ingredients. We source products locally, working alongside small local producers, strengthening sustainable agriculture and fishing, while also reducing our carbon footprint.

On the other hand, the restaurant is directly aligned with Huerta Alaia under the Farm-to-Table concept. With the industrialization of agriculture, we as a society have distanced ourselves from fresh, local foods, so this movement emerges as a response, offering a more conscious and sustainable alternative.

Our dishes aim to be a multi-sensory experience, so our staff is at your disposal to find the perfect wine to accompany your chosen dish. Our proximity to Chile’s most important wine-producing area, the Colchagua Valley, allows us to offer world-class wines produced less than 100 km from our hotel. We also offer exquisite craft beers produced in the region.
